STORY

It had been a long time coming for principal owner, Rafael Gaspar, when in 2016 opportunity called and presented him with the option to acquire two long-standing restaurants in the heart of Chicago’s downtown loop area. With 20 years of restaurant experience, including 5 years in a managing partner role at Streeterville hot spot Quay Restaurant, Rafael was ready to take on ownership of The Grillroom Chophouse and Townhouse Restaurant. After a successful turnaround, both locations became stronger than ever, which led to the purchase of Avenue Ale House in late 2017. At Avenue, Rafael made some notable changes right away. A chef-driven pub menu was implemented to provide guests with healthier food options and an elevated drink offering – along with an environment consistent with the principles of our other locations. In early 2020, longtime Andersonville staple, Fireside Restaurant was added to the group. With 120 years of history in the community, Fireside was a very welcome addition and one that Rafael was eager to build on and make his own. With Rafael’s vision, Shindig Restaurant Group will continue to grow and provide its work family with opportunities to make their industry dreams a reality – just like he did.
